Ramp Spanish Tortillas

My husband loves a frittata/ spanish potato tortilla. In his bachelor days, this was his "go to dish" as he would say. I have never made one. But in near a decade, I have never needed to; that is my husband's job. A few weeks ago, my husband made a frittata with potatoes and ramps. The result, which we paried with green olives, was lovely.

ooh even my hubby loves ritata. actually everytime we feel like having ones ...its his thing to make. He always makes it.

Hey, thanks for everyone's comments. Though a couple (MPG and Kajal) make me wonder why frittata is a husband dish. It has always been my theory that frittata is male and egg bakes are female. Hate to gender this, but from conversation... oh, stupid theory perhaps.
