Spicy Stuffed Peppers

I am incredible impulsive at the market. I buy as much on attractiveness as freshness. I saw these lovely little peppers at the market recently enough and purchased them simply for their look. I used a couple to flavor pasta dishes because they were spicier than bell pepper but with a different sort of heat than jalapenos. But, this treatment didn't really satisfy my visual senses. While it pains me to say it, I am in the end an aesthete.

So tonight I decided the adults would have spicy stuffed peppers--a fancy version of jalapeno poppers. Often people ask me, but why are you posting alcoholic beverage if your blog is named feeding maybelle? Is your blog not about feeding children? Well, because, part of being a parent is finding some quiet moments and experience somethings for yourself. I hope to never make two totally separate meals. But, turning something that Belle likes into something a little more adult (adding blue cheese, chili pepper or a glass of wine) is doable. It only took a few more minutes and was well worth it.

So tonight Belle had beans (flavored with cumin, cilantro leaves, bay leaf, korean garlic and onions) and brown rice. Belle ate this with some tomato sauce, grated cheese, and tortillas.

For the grown-ups, I took a cap off the peppers and scooped out the seeds. Each got filled with a tiny chunk of chedder cheese, then beans and rice. They were then nestled in skillet atop a bed of homemade tomato sauce and simmered until the peppers were tender. More grated cheese and a visit to the broiler and we voila...my need for a pretty (and slightly spicy) dinner was answered.

Okay, now this is really getting scary! I think the same think {buying on aesthetics -cuteness} and I have those same exact little peppers in my fridge! I grilled them up and diced them in a salsa and I still have 3 more left. I guess I have no choice but to stuff them!

We love stuffed bell peppers! But I don't know if I would be brave enough to try these hot variety. But then, removing the seeds would make them less spicy?

And adult/schmadults: we didn't have the distinction between "kid" food and "adult" food when we were growing up. But then I'm old. ;)

Beautiful dish and photos. I dont know why some people would assume when your a parent you give up wine and such. Yes the blog is named about feeding her, but I always see it as your culinary journey with her as a main priority, but nuturing yousrself as well.
