Vegan Stuffed Tomatoes

I was reading Dragon's blog earlier today. Her stuffed tomatoes were so lovely; I decided I needed them. It was quick, easy and delicious. I followed the recipe at Dragon's Kitchen but instead of the cheese, I used nutritional yeast to make a vegan version. I stuffed the filling into small heirloom tomatoes. With all the herbs, they were so flavorful that I didn't need the cheese.

  4. I like this stuffing because it has no cheese. (Sometimes I just have to keep watch of cheese.) Do you think it will still be okay without the yeast?

  5. Dragon: nutritional yeast comes in flakes and powder and is used by some vegans to achieve a cheesy flavor. And, thanks for the great recipe.

    js: absolutely. I happened to be addicted to NY, but with enough herbs and seasoning, they should be delicious. (we actually ate a couple without the yeast because I forgot to put it in each one.)
