I was reading Dragon's blog earlier today. Her stuffed tomatoes were so lovely; I decided I needed them. It was quick, easy and delicious. I followed the recipe at Dragon's Kitchen but instead of the cheese, I used nutritional yeast to make a vegan version. I stuffed the filling into small heirloom tomatoes. With all the herbs, they were so flavorful that I didn't need the cheese.
Those stuffed tomatoes look incredible! I'm thrilled that you made them and I'm curious about the yeast you used. What is it? Is it like tofu?

ReplyDeleteI like this stuffing because it has no cheese. (Sometimes I just have to keep watch of cheese.) Do you think it will still be okay without the yeast?
ReplyDeleteDragon: nutritional yeast comes in flakes and powder and is used by some vegans to achieve a cheesy flavor. And, thanks for the great recipe.

js: absolutely. I happened to be addicted to NY, but with enough herbs and seasoning, they should be delicious. (we actually ate a couple without the yeast because I forgot to put it in each one.)
