Dosas

When I was in high school, I was fairly convinced a boy's whole soul could be summed up by his choice in shoes and how he liked his coffee.  (I am only slightly less judgmental these days.)  That said, I still think situations that draw out the idiosyncratic still offer an insight into the soul. A man who drinks black coffee has something different about him than one who quaffs caramel macchiatos, no?

One particular such indicator of a person's inner being (at least in my mind) is how you like your dosa.  I am a thin and cripsy (dripping in ghee) girl.  My father likes thick and soft ones, verging on uttapams.  My mother prefers them medium with a crispy edge.  Whatever your liking, this month the Daring Cooks made Dosas made with flour rather than rice and urad dal thanks to Debyi (The Healthy Vegan Kitchen).  Go over to Daring Kitchen to read more about them and find the blogroll for other versions.  (The picture below is urad dal and rice dosas with the Challenge filling.  My challenge dosa pictures were not so becoming.)

I'm a thin dosa dripping with butter kinda girl! Gosh, now you got me thinking of dosas. It's been so long since I made it. I think I will just go grab the batter from the store the net time I go there.

Shoes, huh? :) I have to admit that in high school I had a shoe fetish, actually...I don't know that I've outgrown it, but yes, I think I also judged a boy by his shoes :D.

These look like they turned out just the way you like 'em, thin and crispy...and a little golden around the edges, lovely!

Never heard of Dosas before. That surely look really yummy. I think I would like thin and crispy.

I love the thin, crispy dosas too! Back in Singapore, my yogi friends and I make a weekly trip to Little India for paper dosas. I wish I could replicate those at home.

first of all, i go ahead and say it--i like my men to drink their coffee black. :)
secondly, i'm with your mom--i like my flatbreads to be fluffy, but with a few nicely crunchy spots.

Funny - shoes were very big in my house growing up...as far as indicators of character went. Teeth were also a big point of interest.

I think I have the same judgments about coffee, although I've never really acknowledged it. Hmmm, interesting.

After reading about so many different opinions of dosas, I'm inclined to do them again in the more authentic style.

Beautiful dosas! I think I'd like to try the "proper" way to make the dosa sometime. I think the texture looks so lovely. Did Maybelle go for them?

I have never had dosas but imagine that I would like the thicker version, mainly because I like my carb products to be starchy and hearty. These look great, especially with all of that good filling.

And yes, I people that people can be distinguished by some of their most seemingly tangential qualities. The guy who orders the caramel macchiato, for instance, is slightly more indulgent than the guy who orders the iced coffee. Which probably says something about what he's like as a person.

I have never made dosas, but I think I would like them crispy. I am a crispy as opposed to soft kind of girl when it comes to food!

you know your dosas well, I did mine just like your dad prefers it, next time I,ll try to make it thin and crispy just like yours :)

I love the first line of this blog post!! My girlfriends and I, too, judged our teenage male counterparts by their choice of footwear :) (Bulky, high-top sneakers earned our scorn; Converse All-Stars our admiration).

I saw your dosa recipe in the forums and I really want to try it this week since I have a lot of filling and sauce left over. And I will fry them in lots of ghee!

Mmmmm, dosas! Thin thin thin and crispy with spiced potato, sambar and lots of that chutney made with coconut, green chilies and urad dahl. I don't think I've ever seen the dosa dripping in ghee but that sounds awfully good!

We haven't had the nerve to try making them ourselves (it's the fermented rice that gives us pause) but we keep meaning to try thinning farinata batter and using that to make the pancake. Your post reminds me to try that... (farinata batter is MUCH simpler to make than the daring cooks' recipe looks to be).
